The Colombia – Café del Micay is a high-quality specialty Arabica coffee originating from the Micay Valley in southwest Colombia. This region is renowned for its rich biodiversity, fertile volcanic soils, and ideal climatic conditions for growing premium coffee. The coffee is cultivated at an altitude of about 1,600 to 1,900 meters above sea level, which promotes slow bean maturation and a refined flavor profile.
This coffee combines two promising varieties:
- Catuai – a compact Arabica variety known for its sweet taste and balanced body.
- Castillo – a modern Colombian variety, developed for disease resistance, while maintaining rich flavors and good acidity.
The beans are processed using the washed process, where the pulp is carefully removed from the beans. This results in a clean and pure cup profile that fully highlights the natural characteristics of the coffee.
